Three years ago I never would’ve pictured myself sharing recipes with others. I never cooked when I lived at home and didn’t care to learn. Of course when I became a wife that had to change! The biggest obstacle for me in the kitchen is measurements. I hate measuring things out and I never write it down when I come up with my own. I also hate having to follow step by step directions.
With that being said, I have come up with some easy meals that I’m so excited to share. Of course there are similar recipes like mine, but here you’ll find EASY, HEALTHY, and KID FRIENDLY recipes that you really don’t need much direction for. I’m sharing so that others can get dinner ideas when you feel like you’re running out of options.
Fiesta Chicken & Rice Bowl.
Serves: 4
What you’ll need:
3 Chicken Breasts
1 Can of Black Beans
Salsa
Corn
1 Onion
1 Avocado
1-2 Limes
1 bunch of Cilantro
1 Box of Spanish Rice (if you can make your own, even better!)
I usually prefer cooking my chicken in the crockpot, but I didn’t here. I topped the raw chicken with salsa and seasoning I had lying around and baked it. My oven is old and requires different temps and times so bake chicken at the temp and time you normally do.
Cook everything that needs to be cooked and throw it in a bowl! Boom. Add lime juice, avocado, cheese, and cilantro on top of your chicken, rice, onions and corn.
